Vegan Sweet Potato Ravioli

A delicious, vegan ravioli dish that is SO easy to make...

This dish is a total treat for your taste buds!
This ravioli recipe can be made with literally any filling you want but after making this sweet potato one, I doubt you'll ever want to change it.

Ingredients in sweet potato ravioli
To make the ravioli you will need all-purpose flour, water, salt and olive oil.
To make the filling, you will need, sweet potato, cashews, garlic and milk.
You can use dairy-free milk or regular if not vegan.
Tools you will need to make this
You won't need much to make this recipe and you can make the ravioli by hand!
You will need:
- 1 food processor
- 1 pot
- 1 mixing bowl
- Circle Cutter
For measuring: 1/2 tsp, 1 tsp, 1 tbsp, 1/3 cup, 1/4 cup, 1/2 cup, 1 cup.

Vegan Sweet Potato Ravioli

A delicious, vegan ravioli dish that is SO easy to make.
Prep: 30 Cook: 20 Total: 50 minutesYield 2 servings - about 20 ravioli
Ingredients
For Ravioli
- 2 cups all-purpose flour + more for kneading
- 1 teaspoon salt
- 2/3 cups water
- 3 tablespoons olive oil
For Filling
- 1/2 cup peeled and boiled sweet potato
- 1/4 cup raw cashews
- 1 garlic clove
- 2 tablespoons milk (dairy-free/regular)
- 2 tablespoons spring onion
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Method
- Start by placing the cashews in hot water. Set aside.
- In the meantime, make the ravioli dough. In a bowl, mix all the ingredients together. Knead lightly in the bowl then transfer to a floured surface.
- Continue to knead until the dough is combined together. Set aside.
- In a blender or food processor, add all the filling ingredients together. Blend until combined into a thick paste.
- Roll out the dough and cut into it using a circle cutter. Make sure to even the pairs together.
- Add a little bit of filling to one circle from each pair then place the other piece of ravioli dough on top of it. Tightly seal the sides using a fork.
- Boil some water in a pot.
- Once the water has boiled, place a few ravioli at a time and cook for a couple of minutes (or until they rise to the top of the pot).
- Serve with tomato sauce/marinara sauce, more spring onion, parsley and enjoy!
