For Ravioli

  • 2 cups all-purpose flour + more for kneading
  • 1 teaspoon salt
  • 2/3 cups water
  • 3 tablespoons olive oil

For Filling

  • 2 tablespoons spring onion
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

  1. Start by placing the cashews in hot water. Set aside.
  2. In the meantime, make the ravioli dough. In a bowl, mix all the ingredients together. Knead lightly in the bowl then transfer to a floured surface.
  3. Continue to knead until the dough is combined together. Set aside.
  4. In a blender or food processor, add all the filling ingredients together. Blend until combined into a thick paste.
  5. Roll out the dough and cut into it using a circle cutter. Make sure to even the pairs together.
  6. Add a little bit of filling to one circle from each pair then place the other piece of ravioli dough on top of it. Tightly seal the sides using a fork.
  7. Boil some water in a pot.
  8. Once the water has boiled, place a few ravioli at a time and cook for a couple of minutes (or until they rise to the top of the pot).
  9. Serve with tomato sauce/marinara sauce, more spring onion, parsley and enjoy!
