The most comforting meal that's better than takeout

Craving takeout but you also want to be budget-friendly? This meal is for you. Especially if the takeout you're craving is Thai food. This warm, comforting meal checks all the boxes! Tender chicken and a delicious homemade sauce that makes your taste buds tingle!

Ingredients in Peanut Butter Satay Chicken

You will need 1 whole chicken breast. Feel free to use thighs instead.

You will need smooth peanut butter and coconut milk. Make sure the coconut milk has been refrigerated for at least 4 hours before. We will be using just the thick top part.

You will need chilies (optional) and veggies of your choice. I used bell peppers and mushrooms.

Peanut Butter Chicken Satay

Equipment

  • 1 Frying Pan
  • 1 chopping board
  • Wooden Spatula
  • Knife

Ingredients

  • 1 whole chicken breast cut into bite sized pieces
  • 1 can coconut milk refrigerated
  • 1/2 teaspoon crushed chilies optional
  • 2 tablespoons melted smooth peanut butter
  • 2 teaspoons teriyaki sauce
  • 1 garlic minced
  • 2 mushrooms sliced
  • 1 bell pepper sliced
  • 1 tablespoon water
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder

Instructions

  • Prepare all the ingredients first.
  • In a saucepan/frying pan, add some olive oil and turn the heat to medium-high.
  • Add the chicken and cook until lightly brown.
  • Add the chilies, salt, pepper, garlic powder and garlic and mix together.
  • In a bowl, combine the sauce by mixing the peanut butter, coconut milk (use the top part only) and teriyaki.
  • Add the veggies to the chicken then mix in the sauce.
  • Add the water and cover, bring the heat to low.
  • Let simmer for about an hour so that the chicken gets tender.
  • Serve with rice or noodles.
