Better than Starbucks Lemon Loaf

A fluffy and moist lemon loaf...

The BEST lemon loaf you will ever make
The best thing about this lemon loaf is that it does not contain an insane amount of sugar as you would find in most lemon pound cakes. It also contains a small amount of yogurt to help maintain it's fluffiness and for me, that's definitely the secret ingredient here!

Ingredients in lemon loaf
I wouldn’t suggest changing anything in this recipe, keep the ingredients and measurements the same and you won’t be disappointed.
Use regular all-purpose flour for best results.
Use a small amount of granulated sugar and coconut/brown sugar.
Use a combination of baking powder and baking soda.
Any milk can be used for this recipe, I used soya milk to make it dairy-free.
Use 3 medium-sized eggs for best results.
You can use any yogurt you'd like, vegan plain yogurt, regular greek yogurt etc.
You can use lemon zest but may opt to keep it out if you don't like it.
The lemon juice is not optional, use 3-4 tablespoons for a richer taste or 2 tablespoons if you like to keep things light.
Finally, use half a cup of regular or vegan butter.
Tools you will need to make this
You don’t really need much to make this and you can easily use what you already have on hand.
You will need:
- Loaf tin: Cuisinart AMB-9LP 9-Inch Chef's Classic Nonstick Bakeware Loaf Pan, Silver
- 1 mixing bowl : Vollrath 5-Quart Economy Mixing Bowl, Stainless Steel
+ hand mixer or
- Stand mixer: Kenwood KMC011 5 Quart Chef Titanium Kitchen Machine, Stainless Steel
- Spatula to mix: TEEVEA Silicone Spatula Set Rubber Jar Spoon Spatula Kitchen Utensils Non-Stick Heat Resistant for Scraping Cooking Baking Mixing Tools 4 Pack
For measuring: 1/4 tsp, 1/2 tsp, 1 tsp, 1 tbsp, 1/3 cup, 1/4 cup, 1/2 cup, 1 cup.

Prep: 15 Cook: 40 Total: 55 minutes Yield 9 slicesIngredients
- 1/2 cup melted butter
- 1/4 cup brown or coconut sugar
- 1/4 cup granulated sugar
- 1 teaspoon vanilla
- 3 eggs
- 1/3 cup plain/greek yogurt
- 1 tablespoon lemon zest
- 2-4 tablespoons lemon juice (depending on how much you want it to taste like lemon)
- 1/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 – 1/2 cups all-purpose flour
Method
- Preheat the oven to 350°F/180°C and prepare the loaf tin.
- In the bowl of a stand mixer, whisk the butter with the sugars until light and fluffy.
- Add in the eggs one at a time, mixing in between. (Add about a tablespoon of flour if the mixture is seperating).
- Add in the vanilla, yogurt, lemon juice and mix until combined.
- Add the flour, lemon zest, baking powder, baking soda, salt and mix until combined.
- Pour the batter into the loaf tin.
- Bake for 35-40 minutes.

Thank you! I did not measure but you can simply mix powdered sugar and a little bit of lemon juice to make it.
