Soft and fluffy healthy cookies
We all love a good cookie but sometimes we can't handle all that butter and sugar am I right? Sometimes we need something a little light that serves as a healthy snack and this is just it! Healthy ingredients and refined sugar-free...let me know in the comments if you made these!

Ingredients in oat raisin cookies
I wouldn’t suggest changing anything in this recipe, keep the ingredients and measurements the same and you won’t be disappointed.
You will need all-purpose flour and oat flour for these cookies. I have not tried making these cookies with JUST oat flour but if you do let me know below!
Use honey or maple syrup as a sweetener.
Use baking powder and cinnamon (optional).
Any chocolate can be used for this recipe, I decided to use dark chocolate to keep it dairy-free.
Use 1 regular-sized egg for best results.
You will also need coconut oil and finally raisins or any dried fruit you'd like.
Tools you will need to make this
You don’t really need much to make this recipe and you can easily use what you already have on hand.
You will need:
- Baking tray lined with parchment paper
- 2 mixing bowls
- Whisk
- Spatula to mix
For measuring: 1/4 tsp, 1 tsp, 1/3 cup, 1/4 cup, 1/2 cup, 1 cup.

Healthy Oat Raisin Cookies

Ingredients
- 1/3 cup honey
- 1/4 cup melted coconut oil
- 1 egg
- 1 teaspoon vanilla
- 1 cup oat flour
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips
- 1/4 cup raisins
Method
- Preheat the oven to 350°F/180°C and line the baking tray with parchment paper.
- In a bowl, mix the honey, coconut oil, egg and vanilla together.
- In another bowl, mix the flours, baking powder, cinnamon and salt together.
- Add the wet ingredients into the dry and mix to combine.
- Fold in the chocolate chips and raisins.
- Form the cookies and line on the baking tray (they don't grow much so no need to space them out a lot).
- Bake for 12-15 minutes. Enjoy!
