Gluten-Free Chocolate Cookies

These cookies have the perfect fudgy texture!

Gluten-free and absolutely delicious!
I make these cookies for my friends that don't eat gluten and they truly love them. I love them too and I gotta be honest, they're better than most cookies that actually have gluten in them!
Ingredients in gluten-free chocolate cookies
This recipe uses simple ingredients that one would already have in their pantry.
You will need almond flour for this recipe. I like to make my own by blending a bunch of almonds in the food processor.
You can use dairy-free or regular butter.
You will need brown or coconut sugar.
You will also need cocoa powder, make sure it's an organic brand that uses only cocoa as an ingredient.
Use 1 medium sized egg for best results.
I used a vegan and gluten-free protein powder but you can opt to leave it out.
You will also need some chocolate chips, salt and vanilla.
Tools you will need to make this
You don’t really need much to make this recipe and you can easily use what you already have on hand.
You will need:
- Baking tray lined with parchment paper
- 1 mixing bowl + hand mixer or 1 stand mixer
- 2 spoons
For measuring: 1/4 tsp, 1 tsp, 1 tbsp, 1/3 cup, 1/2 cup, 1 cup.

Gluten-Free Chocolate Cookies

Ingredients
- 1 cup almond flour
- 1/2 cup brown sugar
- 1/3 cup cocoa powder
- 1/3 cup butter
- 1 egg
- 1/2 cup chocolate chips
- 1 teaspoon vanilla
- 1 tablespoon chocolate protein powder (optional)
- 1/4 teaspoon salt
Method
- Start by preheating the oven to 350°F/180°C and prepare the baking tray.
- In the bowl of a stand mixer, beat the sugar with the butter until light and fluffy.
- Add in the egg and beat further.
- Add in the vanilla and cocoa powder and mix together until combined.
- Add the almond flour, salt and protein powder (if using) and mix to combine.
- Mix in the chocolate chips.
- Using 2 spoons, grab the cookie batter and form into a circle then lay on the parchment paper in the tray. The batter will be quite wet and so the spoons will help shape the cookies.
- Bake for 12-15 minutes.
