A quick and easy dessert idea

I’m always looking for an easy dessert idea that I can whip up after dinner! This chocolate chip mug cake has really hit the spot lately. You only need a couple of ingredients to make this and it’s totally egg free and vegan. Top this off with some chocolate chips and sea salt then sit down, relax and enjoy!

Ingredients in chocolate chip mug cake

This mug cake uses simple ingredients that one would already have in their pantry.

Use all-purpose flour for best results, combined with baking powder. I haven't tested this recipe with other flours but if you do, make sure to leave a comment and let me know!

The brown sugar can easily be subbed with granulated or coconut sugar. You can even use honey (non-vegan) or maple syrup if you prefer.

The coconut oil can be subbed for melted butter or vegetable oil.

Any milk can be used, soya milk is used here to keep this recipe vegan.

Any add-ins can be used instead or combined with the chocolate chips, for example;

  • Nuts
  • Caramel Chips
  • White Chocolate Chips
  • PB Chips
  • Frozen Berries

Tools you will need to make this

You don’t really need much to make this mug cake and you can easily use what you already have on hand.

You will need:

  • 1 mug / ramekin
  • 1 small mixing bowl
  • Whisk or fork to mix

For measuring: 1/2 tsp, 1 tsp, 1 tbsp, 1/4 cup.

Ingredients

  • 4 tablespoons all-purpose flour
  • 1 – 1/2 teaspoons baking powder
  • 1 tablespoon brown sugar
  • 2 tablespoons melted coconut oil
  • 3 tablespoons soya milk (or any other milk)
  • 1/4 cup vegan chocolate chips
  • 1 teaspoon vanilla (optional)
  • 1/2 teaspoon sea salt (optional -for topping)

Method

  1. In a small bowl mix all the ingredients together until combined and smooth.
  2. Pour the batter in a mug or ramekin and cook in the microwave for 1 minute at the highest setting.
  3. Top with sea salt and more chocolate chips, enjoy!
