Oat bars with a chocolate chip cookie flavor

Who doesn't love chocolate chip cookies? I decided to incorporate that cookie flavor into these healthier oat bars that are also made completely gluten-free. Just make sure you buy the right oats if you have a gluten allergy! You can add pretty much anything into these such as walnuts, almonds, white chocolate chips, dried fruit etc etc!

Ingredients in chocolate chip cookie oat bars

You will need rolled oats to make the oat flour. Obviously you can go ahead and buy a store-bought oat flour.

You will need coconut sugar or brown sugar.

Use 2 regular-sized eggs.

You will need baking soda and baking powder.

You will also need butter, I have not tried using coconut oil instead but if you do, let me know below!

You will also need any ad-in you like. Such as chocolate chips and walnuts.

Tools you will need to make this

You don’t really need much to make this and you can easily use what you already have on hand.

You will need:

  • Mixing bowl + hand mixer or stand mixer
  • 8x8" baking pan
  • Spatula

For measuring: 1/4 tsp, 1 tsp, 1/2 cup, 1 cup.

Chocolate Chip Cookie Oat Bars

Prep: 15   Cook: 25   Total: 40 minutes  
Yield 9 bars

Ingredients

  • 1 cup butter
  • 1 cup coconut sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 3 cups oat flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup chocolate chips
  • 1/2 cup walnuts

Method

  1. Preheat the oven to 350°F/180°C and line the baking pan with parchment paper.
  2. In the bowl of a stand mixer, beat the sugar with the butter until light and fluffy.
  3. Whisk in the eggs then mix in the vanilla.
  4. Add the flour, baking soda, baking powder and mix.
  5. Fold in the chocolate chips and walnuts using a spatula.
  6. Bake for 18-25 minutes, let cool completely before cutting or else they will crumble.
