Cheesy Potato Cakes

The two best things, combined into one!

A heavenly snack or side idea
I just love potatoes! Mashed, roasted, fried...literally heaven for me. This recipe serves as a great side idea instead of your usual fries or roasted potatoes. You can also add pretty much anything you'd like inside. Bacon and cheese would definitely be a dreamy combo!

Ingredients in cheesy potato cakes
You will need potatoes, obviously.
Choose an ingredient to add in the middle. I opted for cheddar cheese.
You will need all-purpose flour and cornflour/cornstarch.
Tools you will need to make this
You don’t really need much to make this and you can easily use what you already have on hand.
You will need:
- Mixing bowl
- Pot
- Frying pan
- Potato Masher
For measuring:1/2 tsp, 1 tsp, 1/3 cup, 1/2 cup, 1 cup.

Cheesy Potato Cakes
Equipment
- Pot
- Frying Pan
- Bowl
- Potato Masher
Ingredients
- 2 pounds potatoes (1KG) Peeled & Chopped
- 1/2 cup flour
- 1/3 cup cornstarch/cornflour
- 1/2 tsp salt
- 1/2 tsp pepper
- 7 small blocks of cheese You can use pretty much any cheese that melts. I used cheddar.
Instructions
- Boil the potatoes until tender.
- Once cooked and cooled, mash the potatoes using a potato masher.
- Add the mashed potatoes to a bowl and add the flours.
- Combine together then mix in the salt and pepper.
- Combine the potato dough together.
- Cut and roll into small balls (Approx 7).
- Flatten the ball dough and add the block of cheese inside.
- Roll back into a ball and place on parchment paper.
- Add some oil to a frying pan and cook the potato cakes.
- Cook for about 5 minutes on each side.
- Serve with anything you'd like and enjoy!
