A flakey, cookie and brownie texture
This recipe was such a hit in my house! The nutty flavors and soft but flakey texture gave these blondies the perfect balance. Sweet but also salty thanks to the sea salt and cashew butter, who doesn't love a good sweet & salty combo?!

Ingredients in cashew butter blondies
I wouldn’t suggest changing anything in this recipe, keep the ingredients and measurements the same and you won’t be disappointed.
Use regular all-purpose flour for best results. I haven't tested other flours but if you do, feel free to leave me a comment below!
Use softened coconut oil or softened butter.
Use 1 medium-sized egg for best results.
You will also need brown sugar, you can sub for coconut sugar to make this slightly healthier.
You will need cashew butter. I decided to make my own by blending cashews, so my cashew butter was on the thick side.
Finally, you will need chocolate chips. Any brand you prefer will do!
Tools you will need to make this
You don’t really need much to make this recipe and you can easily use what you already have on hand.
You will need:
- Baking dish lined with parchment paper. I used two 12cm (4.7 inch) ones
- 1 mixing bowl
- Whisk
- Spatula to mix
For measuring: 1/4 tsp, 1 tsp, 1/2 cup, 1 cup.

Cashew Butter Blondies

Ingredients
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup softened coconut oil
- 1 egg
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- 1/2 cup cashew butter
- 1/2 cup chocolate chips
Method
- Start by preheating the oven to 350°F/180°C and line the baking dish with parchment paper.
- In a mixing bowl, whisk the softened coconut oil with the brown sugar then mix in the egg.
- Add the vanilla and mix.
- Mix in the salt and cashew butter.
- Mix in the flour then fold in the chocolate chips.
- Bake for 20 minutes.
- Let cool slightly then cut into slices.
