Prep: 10   Refrigerate: 20   Total: 30 minutes
Yield 6 truffles

Ingredients

  • 1 cup dates
  • 1/2 cup walnuts - I used walnuts from Good Earth Malta
  • 1/4 cup cocoa powder - I used organic cacao powder from Good Earth Malta
  • 1 tablespoon maple syrup - I used organic honey from Good Earth Malta
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla

Method

  1. Make sure to soak the dates in hot water first. This helps make the blending process faster.
  2. Add the dates and walnuts to the food processor and blend.
  3. Add the cocoa powder, salt, vanilla and maple syrup and blend until smooth.
  4. Form the batter into small balls and line on a baking tray.
  5. You can coat the truffles in melted chocolate, cocoa powder or leave plain.
  6. Refrigerate for 20-30 minutes then enjoy!

Delicious! But my consistency came sticky and couldn’t form them into balls like you said. I had to spoon them onto the tray which didn’t result in perfect round shapes like yours. Taste was amazing though!

Response from The Heavenly Bakes

So glad you liked them! Always wet your hands before forming into balls, that always helps me when the batter is too sticky!
