The best loaf to eat with a cup of tea!

A heavenly apple cinnamon flavor
I have been obsessed with apples lately and have been trying to find ways to switch it up a bit. This loaf is just the perfect fall/winter dessert and it reminds me so much of Christmas!

Ingredients in apple loaf
You will need 1 apple for this loaf.
Use baking soda, baking powder and cinnamon.
You will need ricotta or applesauce. The ricotta gives this loaf an amazing texture.
Use 2 eggs for best results.
Any milk can be used for this recipe, I used soya milk to make it dairy-free.
You will also need melted butter and sugar.

Ingredients
Apples
- 1 apple peeled & chopped
- 1/3 cup brown sugar
- 1 teaspoon cinnamon
Loaf Batter
- 1 3/4 cups all-purpose flour
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 scoop salted caramel protein powder optional
- 1/2 cup melted butter
- 3/4 cup sugar
- 2 eggs
- 1/3 cup ricotta
- 1 teaspoon vanilla
- 1/2 cup milk dairy-free/whole
Instructions
- In a bowl, mix the chopped apple, cinnamon & brown sugar together, set aside.
- Preheat the oven to 180 degrees C / 350 degrees F and prepare the loaf tin.
- In another bowl, add the flour, baking soda, baking powder and salt and mix together.
- Add the sugar and cinnamon and mix.
- Make a hole in the middle and add the melted butter, eggs, vanilla and milk.
- Mix together then add the ricotta and combine.
- Add the apples and mix slowly.
- Add the batter to the loaf tin and bake for 50-55 minutes.
- Let cool & enjoy!
