Apple Cinnamon Baked Oatmeal Cups

A delicious breakfast idea that is perfect to be prepped beforehand...

A heavenly apple cinnamon flavor
I have been obsessed with baked oatmeal lately and have been trying to find ways to switch it up a bit. These cups are perfect for that! I added cinnamon, apple and walnuts and they turned out so delicious. They are also freezer friendly, made dairy-free and healthier.

Ingredients in apple cinnamon baked oatmeal cups
You will need rolled oats. These cannot be subbed with anything else.
Use baking soda and cinnamon.
You will need half a banana and honey or maple syrup to sweeten the mixture.
Use 1 egg for best results.
Any milk can be used for this recipe, I used soya milk to make it dairy-free.
You will also need 1 apple and a handful of chopped walnuts. The walnuts are definitely optional and any other nut can be used instead.
Finally you will need melted coconut oil. Any oil or butter can be used instead.
Tools you will need to make this
You don’t really need much to make this and you can easily use what you already have on hand.
You will need:
- Mixing bowl
- Silicone Cupcake Liners
- Muffin pan
- Whisk
- Spatula
For measuring: 1/4 tsp, 1/2 tsp, 1 tsp, 1 tbsp, 1/2 cup, 1 cup.

Equipment
- Mixing bowl
- Silicone Cupcake Liners
- Muffin pan
- Whisk
- Spatula
Ingredients
- 1 - 1/2 cups rolled oats
- 1 teaspoon cinnamon Optional
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 banana, mashed Large
- 1 egg, beaten
- 1 teaspoon vanilla
- 1/2 cup milk
- 1-1/2 tablespoons melted coconut oil
- 2 tablespoons honey
- 1 apple Peeled & chopped
- 2 tablespoons chopped walnuts Or any other nut - Optional
Instructions
- Preheat the oven to 350°F/180°C and prepare the muffin pan.
- In a mixing bowl, add the egg, mashed banana, milk, coconut oil, honey and vanilla and mix until combined together.
- Mix in the oats, cinnamon, baking soda and salt.
- Using a spatula, fold in the apple and walnut pieces.
- Add about 1-2 tablespoons of batter into the muffin liners then bake for 20 minutes.
- Enjoy these warm, top with yogurt, fruit or nuts!
