Vegan and gluten-free fluffy cookies

These cookies have the BEST texture. I love it when cookies are thick and have a "raw" feel to them...not sure if I'm explaining it right lol but trust me, try them and you'll see!!


Ingredients in almond flour chocolate chip cookies

I wouldn’t suggest changing anything in this recipe, keep the ingredients and measurements the same and you won’t be disappointed.

You will need almond flour for this recipe.

Use brown sugar, baking powder, salt and vanilla.

You will need melted butter and 1 flax egg.

Any chocolate can be used for this recipe, I decided to use dark chocolate to keep it vegan.

Tools you will need to make this

You don’t really need much to make this recipe and you can easily use what you already have on hand.

You will need:

  • Baking tray lined with parchment paper
  • 1 mixing bowl
  • Whisk
  • Spatula to mix

For measuring: 1/4 tsp, 1/2 tsp, 1 tsp, 1 tbs, 1/4 cup, 1/2 cup, 1 cup.

Almond Flour Chocolate Chip Cookies

Prep: 10   Cook: 12   Total: 22 minutes  
Yield 5 cookies


  • 2 cups almond flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 flax egg (1 tbs flax + 3 tbs water)
  • 1 teaspoon vanilla
  • 1/4 cup melted vegan butter
  • 1/4 cup brown sugar
  • 1/2 cup dark chocolate chips


  1. Preheat the oven to 350°F/180°C and line the baking tray with parchment paper.
  2. In a bowl, mix the flax egg with the butter, brown sugar and vanilla.
  3. Mix in the flour, baking powder and salt.
  4. Fold in the chocolate chips.
  5. Using an ice-cream scoop, add the cookies onto the baking tray.
  6. Bake for 12 minutes, let cool then enjoy!
